Self-proclaimed farm girl and Rosewood Estates resident celebrates her 103rd birthday
Eva McKnight has long called Texas home. She was was born and raised in Henderson, Texas, and moved to Rosewood Estates in Tyler, Texas, in 2013 . On November 29, 2014, Eva celebrated her 103rd birthday among close family and friends with a lunchtime celebration at the independent senior living community she calls home.
When asked how Eva’s fellow residents would describe her, they all agreed: She is the most determined person they have ever met. This never-ending determination is perfectly demonstrated by a story from her early years of motherhood.
Left to raise her two young sons after the death of her husband, Eva was determined to provide her children with a bright future. She decided receiving an education was the place to start. However, with two young boys, Eva was not sure how she would attend class and watch over her sons. With a stroke of creativity, Eva fashioned a fishing pole out of a stick and sat her boys down at the lake next to her classroom. This way, Eva was able to keep an eye on her occupied sons and attend class.
As one of only 53,000 centenarians*, those who are 100 years old or older, living in the U.S., Eva participated in a recent survey of Holiday Retirement centenarians, and shared what her secret to longevity is: growing up on a farm out in the sunshine with her 11 siblings. The family raised everything they ate.
